    Grilled Chicken Burger with Mango Salsa

    How could a dinner you put together this quickly be this good? Credit the grill pan, which lets you cook chicken to moist, juicy perfection! Then pair that perfectly cooked chicken with a sweet-tart mango salsa, and you have an irresistible balance of flavours and textures—on the table in under 20 minutes.

    Ingredients

    • 1 (about 1 cup) medium mango, peeled, pitted and finely diced
    • 2 tablespoons red onion, finely chopped
    • 1 tablespoon fresh coriander, chopped
    • 2 teaspoons fresh lime juice
    • ½ + 1/8 teaspoon salt, divided
    • 4 boneless skinless chicken breast halves, trimmed

    Ingredients

    • 2 cobs of sweet corn - corn kernels removed
    • 1 large red capsicum - washed, halved, seeds removed and flesh diced 1cm cubes
    • 20 cherry tomatoes - halved
    • 1 large avocado - halved, seed removed and flesh roughly chopped
    • 1 bunch coriander - washed, dried and roughly chopped
    • 1 clove garlic - peeled and finely minced with salt
    • 1 red birdseye chilli (optional) - deseeded and finely chopped
    • 2 limes - one juiced and zested and the other cut in half

    • 75g butter
    • 50g garlic, finely chopped
