Mini Banana Bread

How are you keeping the kids hunger at bay during the school holidays?  I always make a batch of one of the kids favourite snacks - freshly homemade mini banana bread using the RACO Aerolift Bakeware. This RACO bakeware has truly made baking so much easier for me due to their non-stick superior quality which means baked goods slide out easily (without the need to line the bakeware or grease it!) and also making it easier to clean.

Ingredients:

120g softened butter
200g brown sugar
4 bananas mashed (preferably ripe)
2 eggs
1 ½ cups plain flour
1 tsp baking soda
1 tsp salt
1 tsp vanilla extract


Method:

  • Preheat oven to 160 degrees fan-forced (or 170 degrees non fan-forced).
  • Place the softened butter and brown sugar into a bowl. Mix until it looks pale and fluffy.
  • Add the mashed banana and the eggs to the butter mixture. Mix until well combined.
  • Add the plain flour and baking soda to the bowl.
  • Add the salt and vanilla extract and mix.
  • Pour the mixture into the RACO Aerolift 6 Cup Mini Loaf Pan.
  • Cook for 1 hour.

    Tip: You can check if it’s ready by inserting a skewer into the middle of the mini banana bread and it comes out clean.
